I prepared this very YUMMY three layer Turkey Bolognese Stuffed Spaghetti Squash recipe on Snapchat last night and it was a blast!

Low-carb and low-calorie Italian comfort food can be extremely hard to find. But the alternative of using cooked spaghetti squash (has a great noodle texture) instead of wheat pasta as the base, lifts the load on our digestive system with added fibre and no gluten!
I called this bolognese but of course as you can see, this is not a traditional bolognese (so forgive me any Italian’s or anyone offending by my breaking the culinary “rules”). You can of course modify this to be more like bolognese, but I suggest you try it my layered way first 😉

The squash separates into perfect noodles as you dig in. The flavours combine, the creamy cashew ricotta on top add’s a subtle deliciousness.. Um… lets just say, you will be trying to find countless other combinations to eat squash all the time.
Make Ahead: The squash can be roasted a day or two in advance and refrigerated.
Keep for Later: Once you’ve added the turkey and tomato sauce, bake for 10 minutes, cool, and you can wrap and freeze or keep in the fridge for 2 days. Simply reheat in the oven for 15-20 minutes and top with cashew ricotta afterwards.turkey bolognese stuffed spaghetti squash
2 Cups Raw Cashews (soak for 6 hours in cool water or 1 hour in hot water)
Juice from 1 Lemon
1 teaspoon Sea Salt or Herbamare (salt it to your taste)
1 Tablespoon Nutritional Yeast (optional but adds more cheese flavour and added vitamins)
3/4 Cup of Water (if you need more to get the blender going add in 1/4 cup more maximum)
You can prepare this in a High Speed Blender or Food Processor – add in all ingredients, and blend/process, periodically scraping down the sides. Keep processing until smooth. Will thicken if chilled, enjoy within a week.
