For that cozy night at home where delicious is the craving or when you want to make a snazzy flatbread or thin crust pizza to wow your dinner guests, this recipe is simple and satisfies every time! Tried and tested this has fast become my Best Grain Free Flatbread recipe!
This came to be when I realized I was going to need some flatbread in my life.
I don’t know about you but after a few weeks of no breads, tortillas, or desserts, I start to feel the need. And instead of eating a ball of dough from a nearby restaurant, I just created this at home. And damn is it ever versatile and delicious!
So after plenty of experiments and a thin layer of tapioca flour all over my entire kitchen, I am happy to announce that this recipe is amazing and my friends and family have approved! The texture tears like a real flatbread, and the crispy edges are to die for. While cooking, it bubbles a bit creating the textured bread I love like Naan or traditional pizza crusts.
There are so many amazing health-full options to make breads now that are easy on the allergens and I’ll be sure to share more of my adventures including sprouted and cultured ingredients, but for a simple (super easy) and delicious (treat like) flatbread for your kitchen adventures, this one has been a standby.
This thin, light in colour, crispy, flatbread is delicious with sliced olives, rosemary, basil, and drizzled in olive oil, or another favourite has been with caramelized onions, sliced dried figs, goat cheese (or cashew cheese) and arugula with balsamic glaze!
Try out your favourite toppings and get creative! Sometimes it just gets dunked in olive oil and balsamic in my house because it’s that damn good.
I have used this as base for pizzas, and if you like the more thin and crispy crust, it is BOMB. Just think “flatbread pizza” – my latest was arugula, pesto, pastured ham, and pineapple. It was DELISH and didn’t even need cheese of any kind. 👍🍕
Shown in the picture was a flatbread pizza we made this past weekend with organic tomato sauce, natural dry cured genoa salami*, arugula, daiya dairy free cheese in smoked gouda (its a block, I grated it very fine) although it would have been amazing minus cheese (or with your favourite organic cheese), I topped with chill flakes and after baking drizzled in olive oil and a few pine nuts and microgreens….oh my.🍕
* I bought the Genoa Salami (YUM) at my local butcher that brings in non-medicated and grass fed, pastured meats but whole foods also sells a couple good ones like this.
