Healthy Chicken Tacos
Homemade tacos are fun to prepare, a blast to serve, and extremely delicious to eat. And these Slow Cooked Chipotle Chicken Tacos…well….lets just say #fiesta
Mexican food is my jam and while you may be thinking, “okay white girl” – Make the tacos. Impress your family and friends. And then we will talk.
Oh did I mention these are extremely easy to make? Use your slow cooker and come home to perfectly prepared chicken for your tacos (or your salads)!
If you’re here on my site you’re seeking an alternative to the usual glutinous (tummy ache) tortillas! Use these gluten free-grain free tortillas for this recipe. Served with your favourite toppings – I used green and purple cabbage (great crunch element), cilantro, red radish, and avocado cream (recipe below.)

Avocado Crema 🍴
1 Whole Ripe Avocado
1/2 Cup Coconut Milk (full fat) – add more after blending if you want a more liquid consistency.
Juice from 1 Lemon or Lime (I used the lemon and really enjoyed it – think more sour cream like guacamole)
1/2 teaspoon Organic Garlic Powder or 1/2 Clove Crushed
1 teaspoon Herbamare or Himalayan Crystal Salt
few sprigs of Cilantro (no large stems)
1/2 teaspoon Spirulina (for colour and added nutrition)
Blend until smooth – add spices and salt to taste
Scoop it on your tacos or put into a plastic bag, cut the corner, and pipe the sauce on to your tacos.
